No luck finding sheds yesterday (but we did hike for three hours and my body is, like, "Yes! Exercise, oh yes!).
But dammit, it is so wrong that a stranger can come up "our" mountain and fill the back of his truck full of sheds and we spend hours and can't find a single one. Not even one little spike. We plan on embarking on another shed hunt this afternoon, after we accomplish a few things around here. It is a beautiful, sunny morning (although only 35 degrees) and looks like it may last the day. Yippee! And my mommy is feeling better today. Thank goodness for that, and thanks so much for all of your prayers.
Tuesday's recipe:
Pineapple Chicken
(Served over brown rice or another steamed whole grain is very tasty)
12-15 chicken tenders, cut into 2” pieces
Sauté with olive oil until cooked through
Add juice from 1 20-oz. can pineapple chunks
1/3 c. apple cider vinegar
2T corn starch (mix it into ½ c. hot water before stirring in)
½ c. brown sugar
4T soy sauce
1t red pepper flakes (I like it spicy!)
Simmer 5 minutes on medium heat. Remove from heat and add pineapple chunks. (George loves this recipe.) Enjoy!
